This One Weird Trick Increases Coffee Extraction

This week I was perusing Instagram and came upon a surprising coffee recommendation from author and consultant Scott Rao. According to Rao, when making coffee with manual-fill batch brewers, such as our favorite, the Bonavita 1901, filling the tank with cold water can help slow the brew cycles, increasing extraction (i.e. more delicious coffee flavor).

This tip is surprising because water temperature is one of the key variables that affects coffee extraction. Overwhelmingly, most manual-fill batch brewers struggle to get the water hot enough. (And don’t get us started with baristas brewing your $5 pour-over with too cool water.) In fact, we’ve long heard coffee experts recommend the opposite: preheat your brew water to help the machine get it to temperature.

There are few things as humbling as trying to learn how to roast coffee. It might seem simple enough, but it’s a complex skill that very few people have mastered. Thankfully, coffee legend Scott Rao has finally published his magnum opus, The Coffee Roaster’s Companion. The book is the culmination of over 20 years of coffee roasting experience. Don’t be misled by the slim profile, the content is dense enough to engage a seasoned professional while the style is approachable enough for hobbyists. Over the last 9 months, I’ve read and re-read this book. Sometimes with eager curiosity, other times with frustrated desperation. The book is nicely balanced between technical theory and practical advice. Years ago, Rao’s The Professional Barista’s Handbook was formative for my  barista career.  The Coffee Roaster’s Companion has already proved to be as influential.

Scott Rao needs no introduction for most of our readers. His landmark book The Professional Barista’s Handbook has influenced the current generation of coffee professionals perhaps more than any other single resource.  His books have been formative for our own coffee education, so we were excited for the opportunity to ask him a few questions.  

You recently published your third book on coffee, Espresso Extraction. What motivates you to write?

I wrote my first book because I had some free time after selling a business and had always been frustrated as a barista that there were no good resources for learning. After 14 years of full time work owning cafes, I felt I was ready to contribute to the industry’s knowledge base, and spent a few months educating myself in the local university’s physics library before writing the professional barista’s handbook.
